Cashews are a great source of protein, fibre, vitamin B and many other nutrients.
They have a high fat content, which means that, according to one researcher, if they are left at room temperature they won't stay fresh for long. It is best to store them in an airtight container in the refrigerator. That way they will last around 4 to 6 months. You can also freeze them for about 6 to 8 months. Either way, they're delicious, nutritious and mixed with chilli and palm sugar in an oiled frying pan, are absolutely sensational.
